The Skinny Bitch is such a fun book! And its so easy to read. The book is smart, cynical, and completely in-your-face. I had the chance to sit down and interview Rory Freedman, co-author of the Skinny Bitch and Bitch in the Kitch for Dessert Obsessed. Video will be posted after I edit it.

Rory is beyond nice, and she’s not a Skinny Bitch at all! She’s skinny, but definitely not a bitch. And she was so passionate about veganism. I love interviewing passionate people! I’ve read the book before, but the message is much more powerful in person. Rory is so inspiring. I definitely want to try being vegan, and maybe eventually move towards being completely vegan. I rarely eat meat and dairy products now (well, other than mass consuming icecream), but I do like tuna and salmon. I definitely want to do a vegan episode of Dessert Obsessed.

One of the most interesting things she mentions in her book and in the interview is how devious the dairy industry is. Rory says that researchers from Harvard, Pen State, and others have found that dairy is NOT a deterrent in osteoporosis. And here we are, all drinking milk obsessively because we think we need it so our bones won’t break. And she points out that we are the only species that drinks another species’ milk. AND we are the only species that drink milk as adults! So obvious, but I never realized that until I read the book. And another person at the event was talking about how every single cancer tumor that’s been found has had pesticides in it, and they are just trying to hide it from us. SCARY!!! The message from her, basically, was go organic. Of course, there were many skeptics demanding where that information came from and how valid it is.

So how DO you become a Skinny Bitch? Basically, no meat, dairy, sugar, refined flours, or artificial sweetners. *unhappy face*
I guess that means I can’t ever be a Skinny Bitch…

Until I finish the video, here’s a vegan cookie recipe from Skinny Bitch in the Kitch. (I love the title! it rhymes!)

Peanut Butter Potato Chip Cookies (makes 40 cookies)

  • 2-1⁄2 cups whole wheat pastry flour
  • 2 teaspoons baking soda
  • 3⁄4 teaspoon fine sea salt
  • 1-1⁄2 cups evaporated cane sugar
  • 1 cup refined coconut oil
  • 1 cup all-natural peanut butter, chunky or smooth (whichever you prefer)
  • 1⁄4 cup ice water
  • 1 tablespoon molasses
  • 1 teaspoon pure vanilla extract
  • 2 cups coarsely crushed potato chips

Preheat oven to 375°F. Line baking sheets with parchment.

In a medium bowl, sift together the flour, baking soda, and salt; set aside.

In the bowl of a stand mixer or in a large bowl with a hand mixer, combine the sugar, coconut oil, and peanut butter, mixing on medium-high speed until creamy, about 3 minutes. Add the water, molasses, and vanilla, mixing until well combined. With the mixer on lowspeed, add the flour mixture in 3 to 4 additions, mixing each addition until almost fully incorporated. Add the potato chips, mixing until just combined.

Arrange 2-tablespoon-sized balls of cookie dough 2 inches apart on prepared baking sheets. Press to about 3⁄4-inch thick, then use the back of a fork to mark each cookie with a crosshatch pattern, if desired. Bake for 13 to 15 minutes, until the edges are slightly browned and the centers are set. Thoroughly cool on a cooling rack.

This is super useful when you need a recipe, fast.  But I wish they had an vegan option, because I am trying to bake vegan and I’m also out of eggs!

SuperChocolateChippery Cheesecake, that is!

I’d originally planned to go vegan (baking-wise) this week, and not use any eggs or dairy products in my baking.  I didn’t pick up any eggs on purpose when I went to the grocery store just for this specific reason.  (I never eat eggs; I only buy them for baking).  But I did buy cream cheese.  Which meant that I had to make cheesecake!!  And put off my vegan baking for a day.

I received a copy of My Sweet Vegan, which is what prompted the urge to bake vegan.  The book is so fun!  It has delicious pictures for every recipe (my favorite kind of book!) and vegan twists on the most un-vegan desserts!  I’ve already made grand plans to bake through the entire book, starting with the next thing i make!

This cake was super delicious.  Its much lighter than the usual cheesecake, probably because it only uses 6 oz. of cream cheese (instead of the 24 oz. of cream cheese found in most other recipes).  I made them in the form of cupcakes, and ended up with 11 mini cheesecakes.  I topped each individual mini cake with the chocolate glaze.  I also used 6 oz. of chopped milk chocolate, hence the name SuperChocolateChippery Cheesecake.  My favorite part of the cake was the chunks of chocolate found everywhere!!

I think I like them better in the form of mini cakes than as an entire cheesecake.  You get much more chocolate this way.

Plan B: The Morning After (“Cookies”) April 22, 2008

I’ve invited a guest blogger, my roommate BonBOn, to share her delicious dessert:

It would be a crime if Dorothy’s biggest dessert fanatic (and college roommate), possibly by default because I live with her five days out of the week and consume most of her sugary sweets, failed to put in a good word for the darling dessert-obsessed debutante. (But actually, I just agreed to “appear” as a guest blogger for my own selfish reasons, mainly to stay on her good side so that the supply of freshly baked goods keep on comin’!) I admit that having a sweet tooth, no discipline, and Dorothy as a roommate is a definite recipe for stomachaches and food comas, but never have I been in such sweet, sweet pain. Gooey, chocolate-y, caramel-covered, double-frosted, irresistible pain. Brings new meaning to the word “sadistic,” doesn’t it? So here I am, full off of tonight’s selection of cheese[cup]cakes and turtle squares, inspired to share a creation of my own.

This past weekend, I participated in our annual Relay for Life for the second time, a 24-hour run/walk event hosted by UCLA’s Colleges Against Cancer. Over a hundred tents were mounted around the perimeter of the track upon which students, activists, survivors, and caregivers marched for a cause. Together we raised money to go toward cancer research, honored the memory of those that have lost the gruesome battle, and celebrated life. And together, we became California’s reigning relay campus.

Team members filled up on caffeine, energy drinks, and lots of sweet snacks to fight the forty winks and the uncharacteristic cold of a Los Angeles night. A thoughtful friend delivered extra sweaters and blankets to us at around 3am, along with fruits and a tray of chocolate-covered cookies. But as we grew too tired to eat, the cookies remained untouched. It wasn’t until 10am that the cold disappeared along with the moon over Drake Stadium. It grew hot, a stark contrast from the frost and dew of just seven hours prior. We were melting. And unfortunately, so were the cookies. Over sixty cookies became one giant mound of runny chocolate wafers, sugar cookies, and ginger snaps. Not very appealing to say the least, but I didn’t have the heart to throw them out. And Dorothy, she definitely wouldn’t have approved. So, I volunteered to take them home and attempt to reinvent the melty mess. The result: Plan B Truffles: The Morning After “Cookie” (“Plan B,” which implies that they were a second resort. “The Morning After,” because we discovered they were melted the morning after they were given to us. And of course the whole title is just a play on the pregnancy prevention pill, not that I’m encouraging post-sex prevention methods because you should BE SAFE and invest in reliable pre-sex contraceptives!)

I crushed up the cookie blob into chunks and crumbs, combined them with almond butter and generous amounts of caramel (my first love, chocolate-my second), dipped them in both milk and semi-sweet chocolate, and topped them with slivered almonds. Apparently they made an impression because here I am. Lesson learned here: Recycle! In this case, your food. Enjoy the pictures.
