Black and White Kahlua Swirls May 22, 2008

Otherwise known as Brownie Cheesecake Cups!  Soooooo cute and even more delicious!  These are brownies with bits of cheesecake batter swirled into them.  Just a little bit more decadent than a brownie, but not as rich as cheesecake – the most perfect indulgence!

  I added some Kahlua to the recipe to make  them even better ;)

Kahlua Brownie Cheesecake Cups

for the brownie batter:

5 Tbsp butter
2 ounces semisweet chocolate, chopped
2 eggs
1 Tbsp Kahlua, or other coffee liquor, or vanilla extract
2/3 c all-purpose flour
2/3 c sugar
1/2 tsp baking powder

Melt the chocolate and butter together in the microwave, about 2 minutes, taking out at 30 sec intervals to stir together.  Beat in sugar.  Beat in eggs and Kahlua.  Stir in flour and baking powder.

for the cheesecake batter:

3 Tbsp butter
4 ounces cream cheese
1 egg
2 Tbsp sugar
1 Tbsp all-purpose flour

1 Tbsp Kahlua, or other coffee liquor, or vanilla extract

Beat all ingredients together with your hand mixer until smooth.

To Assemble:

Preheat oven to 350 degrees.  Line 18 cups in cupcake pans.  Spoon 1 Tbsp brownie batter into each cup.  Top with 1 Tsp cheesecake batter.  Top cheesecake batter with 1 more Tbsp brownie batter.  Swirl the top two layers together to create the marbled look.  Repeat for all cupcakes.  Bake for 22-25 minutes, until tops are firm to the touch.  Chill for at least 2 hours in the fridge, until the cheesecake has set.

I really want to try this “healthy” version of Brownie Cheesecake.  The pictures look good, and they’re supposedly good for you!
