Mini Pecan Cakes May 31, 2008

I wanted pecan pie.  But its May, and you can’t find pecan pie anywhere, and i am much much too lazy to make it from scratch… so I just made some mini pecan cakes instead!  I saw these and knew I had to make them.  There were rave reviews about these everywhere in the blogosphere, and how they tasted so much like pecan pie even though they were cakes.  And they’re supersuper easy to make; there’s only 5 ingredients!

But I was disappointed.  They did not taste like pecan pies to me; they tasted like pecan bread.  Maybe I did something wrong??  The recipe is meant for mini cupcake sized cakes, but I made regular cupcake sized cakes.  They weren’t very sweet, and they just tasted like browned butter and pecans.  So I’m still craving pecan pie.

Ahh, too bad that those mini cakes didn’t satisfy your craving for pecan pie :0( They sure do LOOK scrumptious!

boo for being disappointed–i hate it when that happens! maybe these puppies will at least hold you over until you can get your hands on some legitimate peeeeeecan pie. :)

These are definitely meant to be mini’s. When I made them they were so like pecan pie. Don’t give up on them – they’re worth it.
