Luulu, one of my fabulous roomies, bought 4 pounds of bananas. And then didn’t eat them. So what did we do? Banana desserts, of course! I made some amazing banana butterscotch cookies for the show (video will be posted after I edit it), but that only used up a couple of bananas. So then I had to make these superfunfullofeverythingfromourkitchen banana muffins!!!

Everything Banana Muffins (recipe by Dorothy)
2 c all-purpose flour
1 tsp baking soda
sprinkling of salt
1/2 tsp cinnamon
1/2 c brown sugar
1 egg
1 tsp vanilla extract
1/4 c oil
1/4 c applesauce
1/2 c peanut butter
1 c banana puree (3 bananas, mashed)
3 ounces chopped chocolate
Preheat oven to 350 degrees. Prepare muffin pans for baking. Sift dry ingredients (except sugar) together. Whisk the egg in a separate bowl and then add in the vanilla, oil, applesauce. Stir the sugar into the wet mixture. Stir the wet mixture into the dry mixture. Beat in the peanut butter. Then beat in the banana puree and chocolate. Spoon batter into prepared muffin pans until 2/3 full. Bake for 20 minutes.
Recipe makes 18 muffins.
These are much better the next day after the flavors have had a chance to saturate and intermingle. If you can wait that long.
